🥔🥓 Cheesy Loaded Potato Casserole
🛒 Ingredients
2 kg (4–5 lbs) potatoes, peeled & cubed
1 cup sour cream
½ cup milk
4 tbsp butter
2 cups shredded cheddar cheese (divided)
1 cup cooked bacon, crumbled
3 green onions, sliced
Salt & black pepper to taste
👩🍳 Instructions
Boil Potatoes
Place potatoes in salted water and boil 15–20 minutes until fork-tender. Drain well.
Mash & Mix
Mash potatoes with butter, sour cream, milk, salt, and pepper until smooth.
Stir in 1½ cups cheese, most of the bacon, and half the green onions.
Bake
Spread into a greased baking dish.
Top with remaining cheese and bacon.
Bake at 190°C (375°F) for 20–25 minutes until hot and bubbly.
Finish
Sprinkle remaining green onions on top before serving.
