2 tbsp sugar
1 tbsp baking powder

2 large eggs
1¾ cups milk

Zest of 1 orange

Mix dry ingredients
In a large bowl, whisk flour, sugar, baking powder, salt, and spices (if using).
Mix wet ingredients
In another bowl, whisk eggs, milk, melted butter, and vanilla.
Combine
Pour wet ingredients into dry and gently mix. Do not overmix — a few lumps are fine.
Cook
Heat a non-stick pan over medium heat.
Lightly butter the pan.
Pour about ¼ cup batter per pancake.
Cook until bubbles form (about 2–3 minutes), flip, and cook another 1–2 minutes until golden.
