A thick, creamy soup packed with potatoes, cheese, bacon, and sour cream—just like a loaded baked potato in a bowl.
🧾 Ingredients
4 large russet potatoes, peeled and diced
6 slices bacon
1 small onion, diced
3 cloves garlic, minced
3 tbsp butter
3 tbsp all-purpose flour
4 cups chicken broth
2 cups milk (or half-and-half for richer soup)
1 cup sour cream
1 ½ cups shredded cheddar cheese
½ tsp salt
½ tsp black pepper
Toppings (optional but recommended):
Extra shredded cheddar cheese
Crumbled bacon
Chopped green onions or chives
Extra sour cream
👨‍🍳 Instructions
Cook the bacon
In a large pot, cook bacon until crispy. Remove and crumble. Leave about 2 tbsp bacon fat in the pot.
Sauté onion & garlic
Add diced onion to the pot and cook 3–4 minutes until soft. Add garlic and cook 30 seconds.
Make the base
Stir in butter and let melt. Add flour and cook for 1 minute, stirring constantly.
Add liquids
Slowly whisk in chicken broth and milk until smooth.
Cook potatoes
Add diced potatoes. Bring to a simmer and cook 15–20 minutes until potatoes are tender.
Make it creamy
Lightly mash some potatoes with a spoon or potato masher to thicken the soup.
Add cheese & sour cream
Stir in cheddar cheese, sour cream, salt, pepper, and half the bacon. Cook until cheese melts.
Serve
Ladle soup into bowls and top with remaining bacon, extra cheese, and green onions.
