🧾 Ingredients
For the soup
1 lb (450 g) ground beef or Italian sausage
1 small onion, diced
3 cloves garlic, minced
1 tbsp olive oil
1 tsp Italian seasoning
Β½ tsp red pepper flakes (optional)
4 cups chicken or beef broth
1 can (14–15 oz) crushed tomatoes
2 tbsp tomato paste
8 lasagna noodles, broken into pieces

Cheese topping
1 cup ricotta cheese
1 cup shredded mozzarella

2 tbsp chopped fresh parsley or basil

Cook the meat
In a large pot, heat olive oil over medium heat. Add ground beef (or sausage) and cook until browned. Drain excess fat if needed.
Add aromatics

Build the soup
Add crushed tomatoes, tomato paste, and broth. Stir well and bring to a simmer.
Cook the noodles
Add broken lasagna noodles and cook for about 10–12 minutes, until tender.
Prepare the cheese topping
In a bowl, mix ricotta, mozzarella, Parmesan, and parsley.
Serve
