Grandma’s Cozy Chilly-Weather Bowl (Hearty Chicken & Rice Soup) 🍲

Ingredients
2 tablespoons olive oil or butter
1 small onion, diced
2 carrots, sliced
2 celery stalks, sliced
3 cloves garlic, minced
6 cups chicken broth
1 cup cooked shredded chicken
¾ cup uncooked white rice
1 teaspoon dried thyme
1 teaspoon dried parsley
Salt and black pepper to taste
Juice of ½ lemon (optional, for freshness)
Fresh parsley for garnish
Instructions
Sauté the vegetables
In a large pot, heat olive oil or butter over medium heat. Add onion, carrots, and celery. Cook for about 5 minutes until softened.
Add garlic
Stir in minced garlic and cook for 30 seconds until fragrant.
Pour in broth
Add the chicken broth and bring the mixture to a gentle boil.
Add rice and seasoning
Stir in the rice, thyme, parsley, salt, and pepper. Reduce heat and simmer for 15 minutes.
Add chicken
Mix in the shredded chicken and simmer another 5–10 minutes until the rice is tender.
Finish the soup
Add a squeeze of lemon juice if desired and adjust seasoning.
Serve
Ladle into bowls and sprinkle with fresh parsley.
