Ingredients
For the chicken:
2 lbs (900 g) chicken breast or thighs, cut into bite-size cubes
2 tbsp olive oil
1 tbsp lemon pepper seasoning
1 tsp garlic powder
1 tsp paprika
Β½ tsp salt
Β½ tsp black pepper
Juice of Β½ lemon
For the hot honey glaze:
Β½ cup honey
1–2 tbsp hot sauce (adjust to taste)
1 tbsp butter
1 tsp lemon zest
1 tsp lemon juice
Other:
Wooden or metal skewers
Fresh parsley (optional garnish)
Instructions
Marinate the chicken
In a bowl mix olive oil, lemon pepper seasoning, garlic powder, paprika, salt, black pepper, and lemon juice.
Add chicken cubes and toss until well coated.
Let marinate 20–30 minutes (or up to 2 hours for more flavor).
Prepare the skewers
Thread the marinated chicken pieces onto skewers.
Cook the chicken
Grill: Medium-high heat for 10–12 minutes, turning occasionally.
Oven: Bake at 400Β°F / 200Β°C for 18–20 minutes.
Air fryer: 380Β°F / 193Β°C for 12–14 minutes.
Make the hot honey sauce
In a small saucepan over low heat combine honey, hot sauce, butter, lemon zest, and lemon juice.
Stir until melted and smooth.
Glaze the skewers
Brush or drizzle the hot honey glaze over the cooked chicken skewers.
Cook 1–2 more minutes if grilling so the glaze gets sticky.
Serve
Sprinkle with parsley and extra lemon pepper if desired.
