🧾 Ingredients
For the dough
2 cups (250 g) all-purpose flour
1/2 cup (115 g) cold butter, cut into cubes
1 tbsp sugar
1/2 tsp salt
5–6 tbsp cold water
For the apple filling
3 apples, peeled and diced
1/3 cup sugar
1 tsp cinnamon
1 tbsp lemon juice
1 tbsp cornstarch
1 tsp vanilla extract (optional)
For topping
1 egg (for egg wash)
1 tbsp sugar (for sprinkling)

Make the dough
In a bowl mix flour, sugar, and salt.
Add cold butter and rub with your fingers until crumbly.
Add cold water gradually and mix until a dough forms.
Wrap and refrigerate for 30 minutes.
Prepare the apple filling
In a bowl combine diced apples, sugar, cinnamon, lemon juice, cornstarch, and vanilla.
Mix well and set aside.
Shape the pies
Roll the chilled dough on a floured surface.
Cut into circles (about 10–12 cm).
Place 1–2 tablespoons of apple filling in the center.
Fold over and seal the edges with a fork.
Bake
Place pies on a baking tray lined with parchment paper.
Brush with beaten egg and sprinkle sugar on top.
Bake at 180Β°C (350Β°F) for 25–30 minutes until golden brown.
