Ingredients
2 large chicken breasts (or 4 thighs)
2 eggs
1 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon paprika
½ teaspoon black pepper
½ teaspoon salt
2 tablespoons olive oil or melted butter
Instructions
Preheat oven to 200°C (400°F) and line a baking tray with parchment paper.
Prepare the coating
In a bowl, mix the Parmesan cheese, garlic powder, paprika, salt, and pepper.
Beat the eggs
In another bowl, beat the 2 eggs.
Coat the chicken
Dip each chicken piece into the egg.
Then coat it well with the Parmesan mixture.
Place on tray
Put the coated chicken on the baking tray and drizzle lightly with olive oil.
Bake
Bake for 20–25 minutes until golden and cooked through.
For extra crispiness, broil for 2–3 minutes at the end.
