Sun-Dried Tomato, Spinach & Ricotta Grilled Cheese 🥪
🧀 Ingredients (2 sandwiches)
4 slices bread (sourdough or rustic bread works best)
1/2 cup ricotta cheese
1/2 cup mozzarella cheese, shredded
1/3 cup sun-dried tomatoes, chopped
1 cup fresh spinach
1 tablespoon olive oil or butter
1 small garlic clove, minced (optional)
Salt and black pepper to taste
🍳 Instructions
Prepare the filling
In a bowl mix ricotta, chopped sun-dried tomatoes, garlic, salt, and pepper.
Cook the spinach
Heat a small pan with a little olive oil. Add spinach and sauté for 1–2 minutes until wilted. Remove from heat.
Assemble the sandwich
Spread the ricotta mixture on two slices of bread.
Add sautéed spinach.
Sprinkle mozzarella on top.
Close with the remaining bread slices.
Grill the sandwich
Heat a skillet over medium heat.
Brush the outside of the bread with olive oil or butter.
Cook 3–4 minutes per side until the bread is golden and the cheese melts.
Serve
Slice and serve hot.
