Traditional Irish Colcannon (3-Ingredient

Traditional Irish Colcannon (3-Ingredient Version) – Perfect for St. Patrick’s Day 🍀
This simple, traditional Irish dish is cheap, hearty, and comforting. In Ireland it’s often eaten instead of expensive meat, especially around St. Patrick’s Day. The classic version uses just potatoes, cabbage, and butter.
Ingredients (3 ingredients)
4 large potatoes, peeled and chopped
2 cups cabbage, finely shredded
3–4 tablespoons butter
Salt (optional but recommended)
Instructions
Boil the potatoes
Put the chopped potatoes in a pot with water and a pinch of salt.
Boil for about 15–20 minutes until very tender.
Cook the cabbage
During the last 5 minutes of cooking, add the shredded cabbage to the pot with the potatoes.
Drain and mash
Drain everything well.
Add the butter and mash until creamy.
Serve hot
Make a small well in the middle and add a little extra butter if you like.
Optional Add-ins (still traditional)
Green onions or leeks
Black pepper
A splash of milk for extra creaminess
🍽️ Tip: In Ireland, people sometimes serve colcannon with a fried egg or sausage on top for a fuller meal.
If you’d like, I can also show you another 3-ingredient Irish slow-pot meal that farmers traditionally made—it’s even cheaper and very filling. 🍀
