1 tbsp fresh thyme, chopped (or 1 tsp dried)
1 tsp paprika (optional)

  1. Bring to room temperature
    Remove the roast from the refrigerator 1–2 hours before cooking. This helps it cook evenly.
  2. Prepare the seasoning
    Mix together:
    garlic
    olive oil or butter
    salt
    pepper
    rosemary
    thyme
    paprika
    Rub this mixture all over the roast.
  3. Preheat the oven
    Preheat your oven to 230°C (450°F).
  4. Start with high heat
    Place the roast fat side up on a rack in a roasting pan.
