Ingredients
1 cup (225 g) unsalted butter, softened
½ cup powdered sugar
1½ cups all-purpose flour
¼ cup cornstarch
1 tsp vanilla extract
Pinch of salt
Instructions
Preheat oven to 170–175°C (340°F). Line a baking tray with parchment paper.
In a bowl, beat the butter and powdered sugar for 2–3 minutes until light and fluffy.
Add vanilla and salt, mix well.
Add flour and cornstarch, mixing until a soft dough forms.
Roll dough into small balls and place them on the baking tray.
Press lightly with a fork or the bottom of a glass.
Bake 12–15 minutes until the bottoms are lightly golden (tops stay pale).
Let them cool and optionally dust with powdered sugar.
Tips
For extra flavor, add lemon zest or almond extract.
You can also dip half the cookie in melted chocolate.
These store well in an airtight container for about 1 week.
