Easy Crock Pot Beef Stew π²

1Β½β2 lb beef stew meat, cut into chunks
4 potatoes, peeled and cubed
3 carrots, sliced
1 onion, chopped
3 cups beef broth
2 tbsp tomato paste
2 tbsp Worcestershire sauce
3 cloves garlic, minced
1 tsp salt
Β½ tsp black pepper
1 tsp dried thyme
1 tsp paprika
2 tbsp cornstarch + 2 tbsp water (to thicken, optional)
1 cup frozen peas (optional)

Add ingredients to crock pot
Place the beef, potatoes, carrots, onion, and garlic into the slow cooker.
Make the broth
In a bowl, mix beef broth, tomato paste, Worcestershire sauce, salt, pepper, thyme, and paprika.
Pour and cook
Pour the broth mixture over everything in the crock pot.
Slow cook
Cook on LOW for 7β8 hours, or
HIGH for 4β5 hours, until beef is tender.
Thicken the stew (optional)
Mix cornstarch and water to make a slurry. Stir it into the stew during the last 20β30 minutes.
Finish
Stir in peas before serving and let them heat through.
