π₯ Pickled Beets Recipe
π Ingredients
4β5 medium fresh beets
1 cup vinegar (white or apple cider)
Β½ cup water
Β½ cup sugar
1 teaspoon salt
Β½ teaspoon black pepper (optional)
1 small onion, thinly sliced (optional)
π¨βπ³ Instructions
Cook the beets
Wash the beets well.
Boil them in a pot of water for about 30β40 minutes until tender.
Peel and slice
Let the beets cool slightly.
Peel off the skins (they slide off easily).
Slice them into thin rounds or cubes.
Make the pickling liquid
In a saucepan, combine vinegar, water, sugar, salt, and pepper.
Bring to a gentle boil and stir until the sugar dissolves.
Combine
Place the sliced beets (and onion if using) in a clean jar or bowl.
Pour the hot pickling liquid over the beets.
Chill
Let it cool, then cover and refrigerate for at least 2β4 hours (overnight is best).
