Cheesy Mashed Potato Puffs 🧀🥔
A great way to use leftover mashed potatoes—crispy on the outside and soft, cheesy on the inside!
Ingredients
2 cups mashed potatoes
1 cup shredded cheddar cheese
2 large eggs
1/4 cup grated Parmesan cheese
1/4 cup milk
2 tablespoons all-purpose flour
2 tablespoons chopped green onions (optional)
1/2 teaspoon garlic powder
Salt and black pepper to taste
Butter or cooking spray for greasing
Instructions
Preheat oven to 400°F (200°C). Grease a mini muffin pan or regular muffin tin.
In a bowl, mix the mashed potatoes, eggs, milk, cheddar cheese, Parmesan, and flour.
Add green onions, garlic powder, salt, and pepper. Stir until well combined.
Spoon the mixture into the muffin cups, filling each about 3/4 full.
Bake for 20–25 minutes until the tops are golden and slightly crispy.
Let cool for a few minutes, then remove from the pan.
