🍓 Jam Crumb Bars Recipe

For the crust & topping:
2 cups (250g) all-purpose flour
1/2 cup (100g) sugar
1 cup (225g) unsalted butter, cold & cubed
1/4 tsp salt
1 tsp vanilla extract
For the filling:
1 to 1½ cups raspberry or strawberry jam (or any jam you like)
👩‍🍳 Instructions
Preheat oven to 180°C (350°F).
Line an 8×8 or 9×9-inch baking pan with parchment paper.
Make the crumb dough:
In a bowl, mix flour, sugar, and salt.
Add cold butter and rub it in with your fingers (or use a mixer) until crumbly.
Stir in vanilla.
Form the base:
Press about 2/3 of the mixture firmly into the bottom of the pan.
Add the jam layer:
Spread the jam evenly over the crust.
Add topping:
Sprinkle the remaining crumb mixture over the jam.
Bake:
Bake for 35–40 minutes or until golden brown on top.
Cool completely before cutting into squares (this helps it set nicely).
✨ Tips
Use thick jam so it doesn’t get too runny.
Add a squeeze of lemon juice to the jam for extra flavor.
You can mix oats or chopped nuts into the topping for crunch.
