🍰 Moist Vanilla Layer Cake with Dreamy Cream Cheese Frosting
🧾 Ingredients
For the cake:
2 ½ cups (315g) all-purpose flour
2 ½ tsp baking powder
½ tsp salt
1 cup (225g) butter, softened
1 ¾ cups (350g) sugar
4 large eggs
1 tbsp vanilla extract
1 cup (240ml) milk
For the “unreal” frosting:
225g (8 oz) cream cheese, softened
½ cup (115g) butter, softened
3–4 cups (360–480g) powdered sugar
1 tsp vanilla extract
Pinch of salt
👩🍳 Instructions
- Bake the cake:
Preheat oven to 180°C (350°F). Grease and line two round cake pans.
In a bowl, whisk flour, baking powder, and salt.
In another bowl, beat butter and sugar until light and fluffy.
Add eggs one at a time, mixing well after each. Stir in vanilla.
Add dry ingredients in batches, alternating with milk.
Divide batter into pans and bake 25–30 minutes.
Let cakes cool completely before frosting. - Make the frosting:
Beat cream cheese and butter until smooth and creamy.
Gradually add powdered sugar until fluffy and spreadable.
Mix in vanilla and a pinch of salt.
👉 Taste it here… this is the “unreal” part 😄 - Assemble:
Place one cake layer, spread frosting on top.
Add second layer and frost the top and sides.
Chill for 20–30 minutes for cleaner slices (optional).
✨ Tips
Add lemon zest or cocoa powder to switch up flavors.
Want it extra rich? Add a thin layer of jam between the layers.
