🥟 Scottish Bridies (Hand Pies)
🛒 Ingredients:
For the filling:
500 g ground beef (or finely chopped beef)
1 small onion, finely chopped
1 tbsp butter
Salt & black pepper (to taste)
1 tsp Worcestershire sauce (optional)
1 tbsp beef broth (optional, for moisture)
For the pastry:
2 cups (250 g) all-purpose flour
½ tsp salt
½ cup (115 g) cold butter, cubed
4–6 tbsp cold water
Other:
1 egg (for egg wash)
👩‍🍳 Instructions:

  1. Make the pastry:
In a bowl, mix flour and salt.
Rub in cold butter until crumbly.
Add cold water gradually until a dough forms.
Wrap and chill for 30 minutes.
  2. Prepare the filling:
    Melt butter in a pan.
    Cook onion until soft.
Add beef, salt, pepper, and Worcestershire sauce.
Cook until browned (don’t overcook—keep it slightly juicy).
    Let it cool.
  3. Assemble:
Roll dough to about 3 mm thick.
Cut into circles (about 15 cm diameter).
    Add filling to one half.
Fold over to form a half-moon shape.
Crimp edges with a fork to seal.
  4. Bake:
    Place on a baking tray.
    Brush with beaten egg.
Bake at 180°C (350°F) for 25–30 minutes until golden.
    🔥 Tips:
Add a little grated cheese for extra flavor
Traditionally, some versions use raw filling that cooks inside the pastry
You can freeze them before baking for later
    😋 Serving idea:
Serve warm with a side of gravy or even ketchup for a quick, filling meal.
