Scottish Tablet Recipe
Ingredients:
2 cups (400 g) granulated sugar
1/2 cup (120 ml) whole milk
1/4 cup (60 g) unsalted butter
1/4 cup (60 ml) sweetened condensed milk
1 tsp vanilla extract (optional, for flavor)
Instructions:
Prepare the pan:
Line a small baking dish (about 8×8 inches / 20×20 cm) with parchment paper or lightly grease it.
Combine ingredients:
In a heavy-bottomed saucepan, mix the sugar, milk, butter, and condensed milk.
Heat and dissolve:
Place the saucepan over medium heat. Stir constantly until the sugar dissolves completely and the mixture comes to a gentle boil.
Boil and stir:
Reduce heat slightly. Keep stirring constantly to prevent burning. Boil until the mixture reaches the soft-ball stage (240°F / 115°C if using a candy thermometer). The mixture should be thick and a pale golden color.
Cool slightly and beat:
Remove from heat. Let it cool for 5–10 minutes without stirring. Then, stir or beat vigorously with a wooden spoon until the mixture thickens and becomes creamy (it will start to lose its gloss).
Pour and set:
Pour the mixture into your prepared pan. Smooth the top with a spatula. Let it cool completely at room temperature until firm.
Cut into squares:
Once set, cut into bite-sized squares. Store in an airtight container.

Stirring constantly is key—tablet burns easily.
Don’t rush the beating stage; that’s what gives it the crumbly texture.
Some people like a pinch of salt to balance the sweetness.
