Ingredients
For the Cake:
2 cups all-purpose flour
2 cups sugar
3/4 cup unsweetened cocoa powder
2 tsp baking powder
1.5 tsp baking soda
1 tsp salt
1 cup whole milk
1/2 cup vegetable oil
2 large eggs
2 tsp vanilla extract
1 cup boiling water
For the Filling & Frosting:
1 cup unsalted butter, softened
4 cups powdered sugar
1/2 cup unsweetened cocoa powder
1/4 cup heavy cream (more if needed)
2 tsp vanilla extract
Optional: 1 cup chocolate chips or ganache for extra indulgence
Instructions
Preheat oven & prepare pans:
Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
Mix dry ingredients:
In a large bowl, sift together flour, sugar, cocoa, baking powder, baking soda, and salt.
Add wet ingredients:
Add milk, oil, eggs, and vanilla. Beat on medium speed for 2 minutes. Stir in boiling water carefully—the batter will be thin, that’s normal.
Bake:
Pour batter evenly into prepared pans. Bake for 30–35 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes, then remove to wire racks.
Make the frosting:
Beat butter until creamy. Gradually add powdered sugar and cocoa. Add cream and vanilla, beat until smooth and fluffy.
Assemble the cake:
Place one layer on a serving plate, spread frosting generously. Top with the second layer and frost the top and sides. Sprinkle chocolate chips or drizzle ganache if desired.
Chill & serve:
Chill for 30–60 minutes to let it set slightly. Slice, serve, and watch the magic happen!
