Ingredients:
2 pounds (about 900 g) baby potatoes, halved or quartered if large
1 pound (450 g) ham, cut into bite-sized cubes
6 slices of bacon, chopped
1 medium onion, diced
3 cloves garlic, minced
1 cup shredded cheddar cheese (optional)
½ cup chicken broth
2 tsp paprika
1 tsp dried thyme
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions:
Cook the bacon:
In a skillet over medium heat, cook the chopped bacon until crispy. Remove with a slotted spoon and set aside. Leave a little bacon fat in the skillet for flavor.
Prepare the slow cooker:
Place the halved potatoes in the bottom of the slow cooker.
Add flavor:
Top the potatoes with diced onion, garlic, cubed ham, and the cooked bacon. Sprinkle with paprika, thyme, salt, and pepper.
Add liquid:
Pour the chicken broth over everything to keep it moist.
Cook:
Cover and cook on low for 6–7 hours or high for 3–4 hours, until the potatoes are tender.
