Slow Cooker 5-Ingredient Stuffed Bell Peppers
Ingredients (serves 4–6):
4–6 bell peppers, halved and seeded (any color)
1 lb (450 g) ground beef or turkey
1 cup cooked rice (white, brown, or any grain you like)
1 jar (about 24 oz / 680 g) marinara or pasta sauce
1 cup shredded cheese (cheddar, mozzarella, or a mix)
Instructions:
Prepare the peppers:
Wash, halve, and remove seeds from the bell peppers. Set aside.
Mix the filling:
In a bowl, combine ground meat, cooked rice, and half of the cheese. Mix well.
Assemble in the slow cooker:
Spread a little of the marinara sauce on the bottom of the slow cooker.
Place the bell pepper halves cut side up.
Stuff each pepper with the meat and rice mixture.
Pour the remaining sauce over the stuffed peppers.
Cook:
Cover and cook on low for 4–5 hours or high for 2–3 hours, until peppers are tender and meat is fully cooked.
Add cheese:
About 15 minutes before serving, sprinkle the remaining cheese on top, cover, and let it melt.
Serve:
Scoop out each stuffed pepper onto plates and drizzle with extra sauce if desired.
💡 Tip: For extra flavor, season the meat with a little salt, pepper, and garlic powder before stuffing.
