🛒 Ingredients
For the filling:
2 cups mashed sweet potatoes (about 2–3 medium sweet potatoes)
1 cup granulated sugar
½ cup brown sugar
½ cup (120 ml) evaporated milk
⅓ cup (75 g) melted butter
2 large eggs
1 tsp vanilla extract
1 tsp ground cinnamon
½ tsp ground nutmeg
¼ tsp ground ginger (optional)
¼ tsp salt
For the crust:
1 unbaked 9-inch pie crust (store-bought or homemade)

Cook the sweet potatoes
Peel and cut into chunks.
Boil in water for about 15–20 minutes until fork-tender.
Drain and mash until smooth.
Preheat oven
Set oven to 180°C (350°F).
Make the filling
In a large bowl, mix mashed sweet potatoes, sugar, and brown sugar.
Add melted butter and mix well.
Beat in eggs one at a time.
Stir in evaporated milk, vanilla, spices, and salt.
Mix until smooth and creamy.
Assemble the pie
Pour filling into the unbaked pie crust.
Smooth the top.
Bake
Bake for 50–60 minutes, until the center is set (a knife inserted comes out clean).
Cool
Let the pie cool completely (it firms up as it cools).
