🍲 Creamy Garlic Chicken & Potato Soup
🛒 Ingredients:
2 tbsp olive oil or butter
1 small onion, chopped
4 cloves garlic, minced
2 chicken breasts (or thighs)
3 medium potatoes, peeled & diced
1 carrot, sliced
1 liter chicken broth
1 cup milk or cream
1 tsp salt (adjust to taste)
½ tsp black pepper
1 tsp paprika (optional, for warmth)
½ tsp dried thyme or oregano
½ cup shredded cheese (optional but 🔥)
Fresh parsley (for garnish)
👨‍🍳 Instructions:
Sauté the base
Heat oil in a pot. Add onion and cook until soft, then add garlic and stir for 1 minute.
Cook the chicken
Add chicken, season lightly, and cook until slightly browned (doesn’t need to be fully cooked yet).
Add veggies & broth
Toss in potatoes and carrots, then pour in chicken broth. Bring to a boil.
Simmer
Lower heat and let it simmer for 20–25 minutes until potatoes are tender and chicken is cooked.
Shred the chicken
Remove chicken, shred it, then return it to the pot.
Make it creamy
Stir in milk or cream, spices, and cheese if using. Let it heat gently (don’t boil).
Finish & serve
Taste, adjust seasoning, and top with parsley.
