π§ Creamy Caramelized Onion & Cheese Bake
π Ingredients
4β5 medium potatoes (thinly sliced)
2 large onions (thinly sliced)
2 cups shredded cheese (cheddar or mozzarella, or mix)
1 cup heavy cream (or cooking cream)
2 tbsp butter
2 cloves garlic (minced)
1 tsp salt
Β½ tsp black pepper
Β½ tsp paprika (optional)
Β½ tsp dried thyme (optional)
ΒΌ cup grated Parmesan (for topping)

Preheat oven
Set to 180Β°C (350Β°F).
Caramelize onions
Melt butter in a pan over medium heat
Add onions + pinch of salt
Cook slowly (10β15 mins) until golden and soft
Add garlic and cook 1 more minute
Prepare potatoes
Slice thinly for even cooking
Lightly season with salt & pepper
Make cream mixture
Mix cream, paprika, thyme, and a bit more salt/pepper
Layer the dish
In a greased baking dish:
Layer potatoes
Add onions
Sprinkle cheese
Repeat layers
Add cream & top
Pour cream mixture over everything
Top with remaining cheese + Parmesan
Bake
Cover with foil β bake 40 minutes
Remove foil β bake 15β20 minutes more
Top should be bubbly and golden with crispy spots (like your photo)

Broil for 3β5 minutes at the end
Add a little extra cheese on top before finishing
Let it rest 10 minutes before serving (it thickens nicely)
