🧾 Ingredients
For the loaf:
1 ½ cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
½ cup unsalted butter (softened)
¾ cup sugar
2 large eggs
1 tsp vanilla extract
½ cup sour cream (or plain yogurt)
1 cup fresh or frozen blueberries (tossed in 1 tbsp flour)
For the cream cheese layer:
8 oz (225g) cream cheese (softened)
¼ cup sugar
1 egg
½ tsp vanilla extract
👩‍🍳 Instructions
Preheat oven to 180°C (350°F). Grease and line a loaf pan.
Make cream cheese layer:
Beat cream cheese, sugar, egg, and vanilla until smooth. Set aside.
Prepare loaf batter:
In a bowl, whisk flour, baking powder, baking soda, and salt.
In another bowl, beat butter and sugar until light and fluffy.
Add eggs one at a time, then mix in vanilla.
Stir in sour cream.
Gradually add dry ingredients and mix just until combined.
Fold in blueberries.
Assemble:
Pour half the batter into the pan.
Spread cream cheese mixture evenly on top.
Add remaining batter and gently spread.
Bake for 50–65 minutes, or until a toothpick comes out clean (a little cream cheese is okay).
Cool completely before slicing for best texture.
✨ Tips
If using frozen blueberries, don’t thaw them (prevents bleeding).
You can add a simple glaze (powdered sugar + milk) for extra sweetness.
Store in the fridge because of the cream cheese layer.
