🧀 Creamy “Can’t Stop Eating It” Chicken & Potato Bake
🥔 Ingredients:
4 medium potatoes (peeled and sliced thin or cubed)
2 cups cooked chicken (shredded or chopped)
1 small onion (chopped)
2 cloves garlic (minced)
1 cup sour cream (or plain yogurt)
1 cup heavy cream or milk
1 ½ cups shredded cheese (cheddar or mozzarella)
2 tbsp butter
1 tsp salt
1/2 tsp black pepper
1 tsp paprika (optional)
Optional: chopped parsley for topping
👨🍳 Instructions:
Preheat oven to 190°C (375°F).
Cook potatoes slightly
Boil them for 5–7 minutes until just starting to soften (this helps them bake faster and become creamy).
Sauté flavor base
In a pan, melt butter. Cook onion and garlic until soft and fragrant.
Mix creamy filling
In a bowl, combine sour cream, milk/cream, salt, pepper, paprika, and half the cheese.
Assemble the dish
In a baking dish:
Layer potatoes
Add chicken
Add sautéed onion/garlic
Pour creamy mixture on top
Sprinkle remaining cheese
Bake
Bake for 30–40 minutes until golden, bubbling, and slightly crispy on top.
Rest 5–10 minutes before serving (it thickens and tastes even better).
