Mediterranean Ground Beef Stir Fry
**Ingredients:
- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- ½ cup Kalamata olives, sliced
- 1 tsp oregano
- ½ tsp cumin
- ½ tsp paprika
- Salt & pepper to taste
- ¼ cup feta cheese, crumbled
- Fresh parsley, for garnish
**Directions:
- Heat olive oil in a large pan over medium heat. Sauté onion and garlic until fragrant.
- Add ground beef and cook until browned, breaking it apart as it cooks.
- Stir in bell pepper, zucchini, and cherry tomatoes; cook until softened.
- Season with oregano, cumin, paprika, salt, and pepper. Mix well.
- Toss in olives and cook for another 2 minutes.
- Remove from heat, sprinkle with feta cheese, and garnish with parsley.
- Serve as is or with rice, quinoa, or pita bread. Enjoy!
