Honey Balsamic Grilled Chicken with Orzo Salad

Ingredients:

For the honey balsamic chicken:

1.5 lbs boneless, skinless chicken breasts

1/4 cup balsamic vinegar

2 tablespoons honey

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon Dijon mustard

Salt and black pepper, to taste

For the orzo salad:

1 cup orzo pasta

1/2 cup cherry tomatoes, halved

1/2 cup cucumber, diced

1/4 cup red onion, finely chopped

1/4 cup crumbled feta cheese

2 tablespoons chopped fresh parsley

2 tablespoons olive oil

1 tablespoon lemon juice

Salt and pepper, to taste

Directions:

In a bowl, whisk together balsamic vinegar, honey, olive oil, garlic, Dijon mustard, salt, and pepper. Pour over chicken and marinate for at least 30 minutes (or up to 4 hours).

Preheat grill or grill pan over medium heat. Grill chicken for 5–7 minutes per side or until fully cooked and charred. Let rest before slicing.

Cook orzo according to package directions. Drain and let cool.

In a large bowl, toss orzo with tomatoes, cucumber, red onion, feta, parsley, olive oil, lemon juice, salt, and pepper.

Serve grilled chicken slices over orzo salad and drizzle with extra marinade if desired.
