For the filling:
500 g ground beef (or beef + lamb mix)
1 small onion, very finely chopped
2 cloves garlic, minced
2 tbsp chopped parsley
1 tsp salt
Β½ tsp black pepper
Β½ tsp paprika
Β½ tsp cumin (optional but recommended)
For the bread:
3β4 baguettes or long rolls
2 eggs
Β½ cup milk
Oil for deep frying

Prepare the filling
In a bowl, mix ground meat, onion, garlic, parsley, salt, pepper, paprika, and cumin. Mix well until fully combined.
Prepare the bread
Cut baguettes into 10β12 cm (4β5 inch) pieces.
Slice each piece lengthwise, but donβt cut all the way through β you want a pocket.
Stuff the bread
Fill each bread pocket generously with the raw meat mixture. Press gently so itβs compact and even.
Egg wash
In a bowl, whisk eggs with milk.
Dip & fry
Heat oil over medium heat.
Dip each stuffed bread piece into the egg-milk mixture, coating all sides.
Fry until golden
Fry in hot oil, turning carefully, until golden brown and crispy on all sides (about 4β5 minutes total).
The meat will cook inside as the bread fries.
Drain & rest
Place on paper towels to remove excess oil.
