🥔 Crispy Garlic Parmesan Roasted Potatoes
If you’re saying “I’m never having potatoes any other way again,” this is probably why. These potatoes are crispy on the outside, fluffy on the inside, and loaded with garlic, butter, and parmesan flavor. Simple… but dangerously good.
🛒 Ingredients
2 lbs (1 kg) baby potatoes or Yukon Golds, halved
3 tbsp olive oil
3 tbsp melted butter
4 cloves garlic, minced
½ cup freshly grated parmesan cheese
1 tsp salt
½ tsp black pepper
1 tsp Italian seasoning (or dried oregano)
Fresh parsley (optional, for garnish)
👩🍳 Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
Parboil the potatoes
Bring a large pot of salted water to a boil. Add potatoes and cook for 10–12 minutes until just fork-tender. Drain well.
Rough them up
Shake the drained potatoes gently in the pot to create rough edges — this is the secret to crispiness!
Season
In a large bowl, mix olive oil, melted butter, garlic, salt, pepper, and Italian seasoning. Toss potatoes until well coated.
Add parmesan
Sprinkle in most of the parmesan and toss again.
Roast
Spread potatoes cut-side down on the baking sheet. Roast for 25–35 minutes, flipping halfway, until golden brown and crispy.
Finish
Sprinkle remaining parmesan and fresh parsley on top. Serve hot!
