A simple, budget-friendly dish that turns humble cabbage and potatoes into a crispy, caramelized side (or light main dish!).
π Ingredients
1 small green cabbage, cut into thick wedges
4β5 medium potatoes, quartered
4 tbsp olive oil (or melted butter)
3 cloves garlic, minced
1 tsp salt
1 tsp black pepper
1 tsp paprika (optional)
Β½ tsp dried thyme or Italian seasoning
Β½ cup grated Parmesan (optional)

Preheat oven to 400Β°F (200Β°C). Lightly grease a large baking dish or sheet pan.
Layer the potatoes
Spread the raw quartered potatoes evenly on the bottom of the pan.
Stack the cabbage wedges
Place the cabbage wedges directly on top of the potatoes.
Season
In a small bowl, mix olive oil, garlic, salt, pepper, paprika, and thyme.
Brush or drizzle generously over the cabbage and potatoes.
Bake
Cover loosely with foil and bake for 35 minutes.
Remove foil and bake another 20β25 minutes until golden and tender.
Optional finish
Sprinkle Parmesan on top and broil for 2β3 minutes for a crispy top.

Serve with roasted chicken, steak, or sausage.
Add sliced smoked sausage between the layers for a full one-pan meal.
