🥑 Avocado Pasta Salad
🛒 Ingredients:
250 g pasta (penne, fusilli, or any short pasta)
2 ripe avocados, diced
1 cup cherry tomatoes, halved
1/2 red onion, finely chopped
1/2 cucumber, diced
1/4 cup fresh parsley or cilantro, chopped
50 g feta cheese (optional, but delicious)
🥣 Creamy Dressing:
1 ripe avocado
2 tablespoons olive oil
1 tablespoon lemon juice (or lime juice)
1 garlic clove
Salt and black pepper to taste
2–4 tablespoons water (to thin)

Cook the pasta
Boil pasta in salted water according to package instructions. Drain and let it cool completely.
Prepare the dressing
In a blender or mash by hand:
1 avocado
olive oil
lemon juice
garlic
salt & pepper
Blend until smooth. Add water little by little to reach a creamy consistency.
Assemble the salad
In a large bowl, combine:
cooled pasta
diced avocados
tomatoes
onion
cucumber
herbs
Mix everything
Pour the dressing over the salad and gently toss to coat.
Add finishing touches
Sprinkle feta cheese on top if using.
💡 Tips:
Add grilled chicken or tuna for extra protein.
Eat fresh—avocado can brown over time.
A squeeze of extra lemon helps keep it green longer.
