Ingredients:
4 chicken breasts (or thighs)
4–5 medium potatoes, thinly sliced
1 can (400g) cream of mushroom (or cream of chicken) soup
1 cup sour cream (or plain yogurt as a substitute)
1 packet onion soup mix
1 cup shredded cheese (cheddar or mozzarella)
Salt & pepper to taste
Optional: garlic powder, paprika
Instructions:
Preheat oven to 180°C (350°F).
Layer the potatoes
Place sliced potatoes in a greased baking dish.
Lightly season with salt, pepper, and a little garlic powder.
Add the chicken
Place chicken on top of the potatoes.
Make the creamy sauce
In a bowl, mix:
soup
sour cream
onion soup mix
Pour over everything
Spread the mixture evenly over the chicken and potatoes.
Cover and bake
Cover with foil and bake for 45 minutes.
Add cheese & finish
Remove foil, sprinkle cheese on top, and bake uncovered for another 15–20 minutes until golden and bubbly.
