🫐 No-Bake Blueberry Cheesecake Bars
Ingredients
For the crust:
2 cups crushed graham crackers (or digestive biscuits)
½ cup (115 g) melted butter
2 tbsp sugar
For the creamy layer:
2 cups cream cheese (softened)
1 cup powdered sugar
1 tsp vanilla extract
1½ cups whipped cream (or whipped topping)
For the topping:
2 cups blueberries (fresh or frozen)
½ cup sugar
2 tbsp cornstarch
½ cup water
1 tbsp lemon juice
👨🍳 Instructions
- Make the crust
Mix crushed biscuits, melted butter, and sugar.
Press firmly into a baking dish.
Chill in the fridge for 20–30 minutes. - Prepare the creamy layer
Beat cream cheese until smooth.
Add powdered sugar and vanilla, mix well.
Fold in whipped cream gently.
Spread over the chilled crust. - Make the blueberry topping
In a saucepan, combine blueberries, sugar, water, and lemon juice.
Bring to a simmer.
Mix cornstarch with a little water, then add it in.
Cook until thick and glossy.
Let it cool completely. - Assemble
Pour the cooled blueberry topping over the cream layer.
Refrigerate for at least 4 hours (overnight is best).
🍰 Serving Tips
Slice cleanly using a warm knife.
Add extra fresh blueberries on top if you want it to look like the picture.
You can swap blueberries for strawberries or mixed berries.
