🍗 Chicken Salad with Grapes
Ingredients
2 cups cooked chicken, chopped or shredded (rotisserie chicken works great)
1 cup red or green grapes, halved
1/2 cup celery, finely chopped
1/3 cup mayonnaise
2–3 tablespoons plain Greek yogurt (optional, for a lighter taste)
1–2 teaspoons Dijon mustard (optional, adds a nice tang)
1–2 tablespoons lemon juice
Salt and black pepper, to taste
Optional: 1/4 cup chopped walnuts or pecans
Instructions
Prepare the chicken: Chop or shred your cooked chicken into bite-sized pieces.
Mix the base: In a large bowl, combine mayonnaise, Greek yogurt, Dijon mustard, lemon juice, salt, and pepper.
Add ingredients: Stir in chicken, grapes, and celery.
Optional crunch: Fold in nuts if using.
Chill: Cover and refrigerate for at least 30 minutes to let flavors blend.
Serve: Enjoy in sandwiches, lettuce wraps, croissants, or on its own.
Tips
Use rotisserie chicken for the fastest version.
Chill longer (1–2 hours) for better flavor.
Add a pinch of curry powder if you want a slightly different twist.
