Old-Fashioned Beef & Pearl Onion Casserole

Ingredients
1 ½ lbs (700 g) beef stew meat or chuck roast, cut into chunks
2 cups pearl onions (fresh or frozen, peeled)
1 can (10.5 oz / 300 g) condensed cream of mushroom soup
1 cup beef broth
Optional for extra flavor
Salt and black pepper
1 teaspoon garlic powder
Fresh parsley for garnish
Instructions
Preheat your oven to 325°F (160°C).
Place the beef chunks in a greased casserole dish or Dutch oven.
Add the pearl onions over the beef.
In a bowl, mix the condensed cream of mushroom soup with the beef broth until smooth.
Pour the mixture evenly over the beef and onions.
Cover tightly with foil or a lid.
Bake for 2½ to 3 hours, until the beef is fork-tender.
Season with salt and pepper if needed, garnish with parsley, and serve warm.
