Blueberry Cream Cheese Loaf
Ingredients
1 package (8 oz) cream cheese, softened
1/2 cup butter, softened
1 1/4 cups sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup fresh or frozen blueberries (if frozen, do not thaw)
1 tablespoon flour (for coating blueberries)
Optional Glaze
1/2 cup powdered sugar
1–2 tablespoons milk
1/2 teaspoon vanilla extract
Instructions
Preheat oven to 350°F (175°C). Grease and lightly flour a loaf pan.
In a large bowl, beat cream cheese, butter, and sugar until smooth and fluffy.
Add eggs one at a time, mixing well after each. Stir in vanilla.
In another bowl, whisk together flour, baking powder, and salt.
Gradually add dry ingredients to the wet mixture and mix until just combined.
Toss blueberries with 1 tablespoon flour, then gently fold them into the batter.
Pour batter into the prepared loaf pan and smooth the top.
Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
Let cool in the pan for 10–15 minutes, then transfer to a wire rack.
If using glaze, mix glaze ingredients and drizzle over the cooled loaf.
