Smothered Chicken with Onion Gravy
Ingredients
4 boneless or bone-in chicken breasts (or thighs)
2 large onions, thinly sliced
2 tablespoons olive oil
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups chicken broth
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1/2 teaspoon dried thyme
Salt and black pepper, to taste
Optional: 1/2 cup heavy cream for extra richness
Fresh parsley for garnish
Instructions
Season the chicken
Sprinkle chicken with garlic powder, onion powder, paprika, thyme, salt, and pepper.
Brown the chicken
Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4–5 minutes per side until golden brown. Remove and set aside.
Cook the onions
In the same skillet, melt butter and add sliced onions. Cook slowly for 10–15 minutes until soft, golden, and caramelized.
Make the gravy
Sprinkle flour over the onions and stir well for 1–2 minutes. Slowly pour in chicken broth while stirring to avoid lumps. Simmer until thickened.
Return chicken to skillet
Place chicken back into the gravy. Cover and simmer on low for 20–25 minutes until chicken is fully cooked and tender.
Optional creamy version
Stir in heavy cream during the last 5 minutes for a richer gravy.
Serve
Spoon the onion gravy generously over mashed potatoes, rice, or biscuits.
