Creamy Chicken Rice Casserole
Ingredients
2 cups cooked chicken, shredded or diced
2 cups cooked rice
1 can (10.5 oz) cream of chicken soup
1 cup sour cream
1 cup shredded cheddar cheese
1 cup broccoli florets (fresh or frozen)
1/2 cup milk
1 small onion, finely chopped
2 cloves garlic, minced
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/2 teaspoon dried parsley
1/2 cup crushed crackers or breadcrumbs
2 tablespoons melted butter
Instructions
Preheat oven to 180°C (350°F). Grease a baking dish.
In a large bowl, mix together:
cooked chicken
cooked rice
cream of chicken soup
sour cream
milk
broccoli
onion
garlic
salt, pepper, paprika, and parsley
Stir in half of the shredded cheese.
Pour mixture into the prepared baking dish and spread evenly.
Top with remaining cheese.
Mix crushed crackers or breadcrumbs with melted butter and sprinkle over the top.
Bake for 30–35 minutes, until hot, bubbly, and golden on top.
Let rest for 5 minutes before serving.
