Ingredients
2 cups all-purpose flour
1 tbsp baking powder
1/2 tsp salt
1/2 tsp black pepper
3 large eggs
1 cup milk
1/2 cup melted butter (or vegetable oil)
1 cup shredded cheese (cheddar or mozzarella)
1/2 cup diced cooked ham (or cooked bacon/chicken)
1/2 cup diced red bell pepper
2 tbsp chopped parsley or green onions
Instructions
Preheat oven to 180°C (350°F). Grease or line a muffin tin with paper liners.
In a large bowl, whisk together flour, baking powder, salt, and pepper.
In another bowl, whisk eggs, milk, and melted butter until smooth.
Pour the wet ingredients into the dry ingredients and mix gently.
Fold in cheese, diced ham, red bell pepper, and parsley.
Spoon the batter evenly into the muffin cups, filling each about 3/4 full.
Sprinkle a little extra cheese and herbs on top if desired.
Bake for 20–25 minutes or until golden brown and a toothpick inserted comes out clean.
Let cool for 5 minutes before serving.
