A colorful, satisfying casserole packed with vegetables, light cheese, and simple seasonings — perfect for a healthy dinner or meal prep.
Ingredients
2 cups broccoli florets
1 zucchini, sliced
1 bell pepper, chopped
1 cup cherry tomatoes, halved
1 carrot, thinly sliced
1 small onion, chopped
2 cloves garlic, minced
3 eggs
½ cup low-fat Greek yogurt or milk
1 cup shredded mozzarella or light cheese
1 tablespoon olive oil
1 teaspoon Italian seasoning
½ teaspoon paprika
Salt and black pepper to taste
Optional: fresh parsley or basil for garnish
Instructions
Preheat oven to 190°C (375°F).
Lightly grease a baking dish with olive oil.
In a large bowl, combine broccoli, zucchini, bell pepper, tomatoes, carrot, onion, and garlic.
Add olive oil, Italian seasoning, paprika, salt, and pepper. Toss well.
Spread vegetables evenly in the baking dish.
In another bowl, whisk together eggs and Greek yogurt (or milk).
Pour the egg mixture over the vegetables.
Sprinkle cheese evenly on top.
Bake for 30–35 minutes until the vegetables are tender and the top is golden.
Let cool for 5 minutes before serving.
