Slow Cooker Pork Belly & Tomatoes
A rich, comforting slow cooker meal with tender pork belly simmered in tomatoes and savory seasonings.
Ingredients
1½–2 lbs pork belly strips, cut into chunks
1 can diced tomatoes (14–15 oz)
1 onion, sliced
3 cloves garlic, minced
1 cup chicken broth
1 tsp smoked paprika
1 tsp Italian seasoning
Salt and black pepper, to taste
Optional: chopped parsley or green onions for garnish
Instructions
Place the pork belly strips in the slow cooker.
Pour the diced tomatoes over the pork.
Add onion, garlic, and chicken broth.
Sprinkle with smoked paprika, Italian seasoning, salt, and pepper.
Stir gently to combine.
Cover and cook:
Low: 7–8 hours
High: 4–5 hours
Once the pork is tender, skim excess fat if desired.
Serve hot over rice, mashed potatoes, noodles, or with crusty bread.
