Frozen Blueberry Greek Yogurt Clusters
Ingredients
2 cups fresh or frozen blueberries
1½ cups plain or vanilla Greek yogurt
2–3 tablespoons honey or maple syrup
1 teaspoon vanilla extract (optional)
1 cup dark or milk chocolate chips
1 tablespoon coconut oil
Instructions
Mix the filling
In a bowl, combine Greek yogurt, honey, and vanilla extract. Fold in the blueberries.
Form clusters
Line a tray or plate with parchment paper. Scoop small spoonfuls of the mixture onto the tray to form clusters.
Freeze
Freeze for about 1–2 hours, or until solid.
Melt the chocolate
Microwave chocolate chips and coconut oil in 20-second intervals, stirring until smooth.
Dip or drizzle
Dip each frozen cluster into melted chocolate or drizzle chocolate over the tops.
Freeze again
Return clusters to the freezer for 10–15 minutes until the chocolate hardens.
Tips
Store in a freezer-safe container for up to 1 month.
Try adding crushed nuts, granola, or shredded coconut for extra texture.
Strawberries or raspberries work great too!
