Polish Kielbasa & Potato Casserole
Ingredients
1 lb smoked kielbasa sausage, sliced
5 medium potatoes, peeled and thinly sliced
1 onion, sliced
1½ cups shredded cheddar cheese
1 cup sour cream
1 can cream of mushroom soup
2 tbsp butter
1 tsp garlic powder
Salt & black pepper to taste
Optional: chopped parsley for garnish
Instructions
Preheat oven to 375°F (190°C).
Butter a casserole dish.
Layer half the potatoes in the dish.
Add half the onions and kielbasa.
Mix sour cream, soup, garlic powder, salt, and pepper together.
Spread half the creamy mixture over the layers.
Repeat layers with remaining ingredients.
Top with cheddar cheese.
Cover with foil and bake 45 minutes.
Remove foil and bake another 15–20 minutes until bubbly and golden.
Tips
Add sauerkraut for a more traditional Polish flavor.
Smoked sausage works best.
Let it rest 10 minutes before serving.
