Slow Cooker Stuffed Pepper Beef Casserole
This comforting slow cooker meal tastes like classic stuffed peppers, but with much less work.
Ingredients
1 lb ground beef
3 bell peppers, diced (any color)
1 small onion, diced
1 can (14–15 oz) diced tomatoes
1 cup uncooked rice
2 cups beef broth
1 tsp garlic powder
1 tsp Italian seasoning
Salt and black pepper, to taste
1½ cups shredded cheddar or mozzarella cheese
Instructions
Brown the ground beef in a skillet over medium heat. Drain excess grease.
Add diced peppers and onion to the slow cooker.
Layer the cooked ground beef on top.
Stir in diced tomatoes, uncooked rice, beef broth, garlic powder, Italian seasoning, salt, and pepper.
Cover and cook:
Low: 5–6 hours
High: 2½–3½ hours
Once rice is tender, sprinkle cheese over the top.
Cover for another 10–15 minutes until melted.
