🥗 2-Point Creamy Chicken Salad
Ingredients
2 cups cooked chicken breast (shredded or chopped)
1/2 cup plain Greek yogurt
1 tbsp light mayonnaise (optional but improves taste)
1 tsp Dijon mustard
1 small celery stalk (finely chopped)
2 tbsp red onion (finely chopped)
1 tbsp lemon juice
Salt & black pepper to taste
Optional add-ins (for crunch/sweetness):
A few grapes (halved) or diced apple
A handful of chopped pickles or cornichons
Fresh parsley or dill
Instructions
In a bowl, mix Greek yogurt, mayo (if using), mustard, lemon juice, salt, and pepper.
Add shredded chicken, celery, and onion.
Stir until everything is well coated.
Taste and adjust seasoning.
Chill for 10–20 minutes for best flavor.

In lettuce wraps 🥬
On whole grain toast
With cucumber slices or crackers
Or just straight from the bowl (honestly best way)
