Best Steak Marinade
This rich, savory marinade works beautifully for ribeye, sirloin, flank, strip steak, or skirt steak.
Ingredients
½ cup soy sauce
¼ cup olive oil
¼ cup Worcestershire sauce
2 tbsp lemon juice
2 tbsp balsamic vinegar
3 cloves garlic, minced
1 tbsp Dijon mustard
1 tbsp brown sugar or honey
1 tsp black pepper
1 tsp onion powder
½ tsp smoked paprika
Optional: pinch of red pepper flakes for heat
Instructions
In a bowl or zip-top bag, whisk together all marinade ingredients.
Add steak and coat thoroughly.
Marinate:
Thin cuts: 2–4 hours
Thick steaks: 6–12 hours
Avoid over-marinating more than 24 hours.
Remove steak from marinade and pat dry lightly.
Grill or sear over high heat until desired doneness:
Rare: 125°F / 52°C
Medium-rare: 135°F / 57°C
Medium: 145°F / 63°C
Rest steak 5–10 minutes before slicing.
Extra Tips
Add a tablespoon of butter while resting for steakhouse flavor.
For tougher cuts like flank or skirt steak, slice thinly against the grain.
This marinade also works well for chicken and mushrooms.
