Cozy “Never Get Tired of It” Vegetable Soup
A hearty, flavorful soup that’s easy to make, comforting, and great for leftovers.
Ingredients
2 tbsp olive oil
1 onion, diced
2 carrots, sliced
2 celery stalks, sliced
3 garlic cloves, minced
1 medium potato, diced
1 zucchini, chopped
1 can diced tomatoes (400g / 14 oz)
6 cups chicken or vegetable broth
1 cup green beans or peas
1 tsp Italian seasoning
1/2 tsp paprika
Salt and black pepper, to taste
1 cup small pasta or cooked rice (optional)
Fresh parsley for garnish
Instructions
Heat olive oil in a large pot over medium heat.
Add onion, carrots, and celery. Cook 5–6 minutes until softened.
Stir in garlic and cook 30 seconds.
Add potato, zucchini, tomatoes, broth, Italian seasoning, paprika, salt, and pepper.
Bring to a boil, then reduce heat and simmer 20 minutes.
Add green beans/peas and pasta or rice if using. Cook another 10 minutes until tender.
Taste and adjust seasoning. Garnish with parsley and serve hot.
