Crispy Parmesan Zucchini Sticks
A super easy snack or side dish that’s crispy outside, tender inside, and seriously addictive.
Ingredients
2 medium zucchinis
1 cup breadcrumbs (panko works best)
1/2 cup grated Parmesan cheese
1 tsp garlic powder
1/2 tsp paprika
Salt and pepper to taste
2 eggs
Cooking spray or a little olive oil
Optional Dip
Ranch dressing
Garlic aioli
Marinara sauce
Instructions
Preheat oven to 220°C (425°F).
Line a baking tray with parchment paper.
Cut zucchinis into fry-shaped sticks.
In one bowl, beat the eggs.
In another bowl, mix:
breadcrumbs
Parmesan
garlic powder
paprika
salt & pepper
Dip each zucchini stick into egg, then coat in breadcrumb mixture.
Place on the tray and lightly spray with oil.
Bake for 20–25 minutes, flipping halfway, until golden and crispy.
Extra Crispy Tip
For even crispier “fries,” cook them in an air fryer at 200°C (400°F) for about 12–15 minutes.
